Mango Salsa Chicken Breasts


Since high school my oldest daughter has been friends with a young man who is determined to become a chef. Over the last three or so years he has become friends with the rest of the family. He attends a Collage in Fort Lauderdale, Florida and will, in less than a year, graduate as a chef. One night while he was visiting the dinner hour arrived and we rummaged through my kitchen and the following recipe was born. While I may have suggested some ingredients, James deserves all the credit for the delicious results.

While cooking in the chicken the salsa gets just enough heat for the flavours to merge and develop.

Ingreadents

Mango Salsa:
1    med. mango, diced
Chicken - Mango Salsa
1/2 med. onion, diced
6    cherries, pitted, diced
2   limes, juice of
2   Cloves garlic, chopped
1/2  tsp. lime zest
dash red pepper flakes
chopped parsley
basil
dash black pepper
shredded cheese (cheddar is best)




Mix salsa in small bowl and let stand.

Slice a long pocket in the thickest part of the chicken breasts being careful not to slice through the chicken breasts and fill cavity with salsa, Sauté on both sides.

Place on baking sheet and top with cheese. Bake at 375 for 30 to 40 min. till done.

Serving suggestion; add a green vegetable, such as broccoli and slices of fruit, carambola or mango work well.  For the beverage milk, soda or white wine all work depending on preference.
